Oma's Appeltaart for my "Big Birthday"

It was my 'Big Birthday' yesterday and my dutch friend Anne baked this gorgeous cake.

For the dough: 

400 grams Self raising flour
200 grams sugar
200 grams butter
8 grams vanilla sugar or vanilla essence
15 grams breadcrumbs
1/2 egg (mixed)

Mix all the ingredients together except for the breadcrumbs, you will use these later.
Mix it together untill it forms a ball. Devide the dough into one bigger ball and one smaller.
Role the base and the sides using the bigger ball and cover the tin. put this covered in the fridge to rest for at least half an hour (so the butter goes hard). Put the left over dough also in the fridge.

for the filling:
1/2 egg (mixed)
3 decent sized apples

Let the raisins soak in cold tea and cinnamon for approxametly an hour, drain the raisins properly after. Meanwhile cut the apples in little squares and season with cinnamon and sugar. Add the raisins and walnuts and mix together ( you can do this a day before, it will only taste better!!)

Take the left over dough out of the fridge and role flat. Cut in long strips.
Take the tin out of the fridge and cover the bottom with breadcrumbs (this will suck the moisture from the apple mixture so the bottom of the cake won't go soggy). Fill with the apple mixture and put the strips criss cross on the cake. Make sure the sides are sealed. Use half the egg to brush on the dough.

Put in oven 180 degrees for around 40 minutes.
