Anzac Balls

Ingredients:

1 cup almond meal

1 cup rolled oats

1 cup shredded coconut

1/2 cup unrefined cane sugar

1 tsp cinnamon

1/4 cup coconut oil 

2 Tbl apple juice concentrate

1/2 tsp baking soda

1 Tbl water

 

Method:

In a mixing bowl mix: almond meal, coconut, sugar, cinnamon and the oats. Stir.

In a small saucepan heat the coconut oil and apple juice concentrate. Stir over a low heat.

Combine the baking soda and water, then add to the oil mix – it will froth up.

Add the frothy mix to your dry mix and combine it well. Add a little water if it’s too crumbly.

With wet hands, shape small balls of the dough, it makes approx. 25.

Place on a baking tray lined with baking paper.

Bake for 20-30 minutes, checking on them so they don’t go black and crispy.

Keep in an airtight container for up to a week.
